複雜 --- Complicated

i've come to a stage in life where i finally realised life isn't as simple or as carefree as i thought it would be.

carefree leads to forever regrets and unrecoverable relationships. why do people hope and dream for carefree lifestyle?

this world isn't simple, it's complicated! or maybe perhaps i have finally started processing things with my never-been-used brain and things have become real and not imaginary.

live a life with plans, care and thoughts and most importantly a heart which guides you down the right route to goodness in life...

i envy the ones that have found their paths, i believe i will get there too!

CC: "i have forgotten when i last tasted a JJ-Confuron wine so this was a good reminder, bright pleasing perfume sqeeuzing pass the cloud of red fruit i found intensity and strength, excellent structure and trademark sweet juicy acidity, an aging potential."

Good Fortune La Fortune

CC: "has always been one of my all-time favourite, this is the 5th vintage i've tasted after 05 07 08 & 09, and yet i'm not sick of it at all.. the 2010 resembles vintage 08.. with balanced structure at such a young age and dangerously approachable... it offers the sweet darkness of burgundy earth which differs from the 07s, being strikingly bright when tasted young... the texture is smooth, refined and light-bodied to keep you interested.. 2nd pour shows the true identity of red forest fruit, cherries and raspberry.. and as my sis says "a wine with plum peel".. hahaha "

Starry Starry Wine --- 滿天星

i don't know what to say about this wine...
it's an australian wine and i genuinely loved it
i usually don't tend to drink australian wines
they all tend to be over-extracted, over-powered, over-sweetened, over the top, over and over and they taste pretty much the same in terms of quality and style

but with this wine
a beautiful label fully encompasses the outside of the bottle
that's gotta be a first
a milky way of stars sitting along the name of this flagship wine of Clarendon Hills vineyard

1994 Clarendon Hills "ASTRALIS"
CC: "captured by the stars on the label, 1994 marks the debut of this wine, generously JK pops the cork and ooosh comes the amazing nose from the bottle, bright murky red so intense u cannot see through it, indicating a wine with mysterious power and flavors, flamboyant! nose with dry fruit characters, my lord this has perfect balance, soft and sweet such gentle tannins, dry prunes/strawberry and a very distinguish flavor which i cannot describe... brilliant"
momentarily loss of words... i wish i own a bottle of this

Unique Champagne --- 非一般的香檳

the most common grape types seen for the production of champagne are chardonnay and pinot noir.
usually a blend of both with small dosage of other minor grape varieties to give the wine its distinguish character.
now with a 100% chardonnay, you get blanc de blanc
100% pinot noir comes blanc de noir
what if u produce a champagne with chardonnay and 3 other grape types which are no longer permitted to be grown in the Champagne region?

CC: "i didn't know what to expect from this, 2004 an admiring vintage for Barolo, Pio Cesare - one of the biggest names of Italy, so the colour is dark forest red/brown, nose of sweet earth, soft juicy tannins of what an aged but big wine should display, elegant, good weight, with a tint of tobacco and sweet cigar, a great lead in to the next wine..."

CC: " this is by far the oldest wine I have ever tasted and I envy the ones who were born in Vintage 1961 regarded as one of the greatest year of Bordeaux. To live a life of 51 years (if my maths is correct) that's certainly somewhat remarkable, not to mention how it blossomed and showed its full potential on the night... dark ruby with a tinge of brown rim of old age, what fine nose of sweet fruit and mellow oak of Bordeaux, smooth silky texture leading up to perfect harmony with the intesne juciy flavours, and can tannins be so soft and delicate? oh yes within this magnificent wine of the night... full credits to JK for providing this lovely wine... merci beaucoup"

at the TING --- 亭 (part ONE)

making the 'ting ting' sound at the TING was very enchan-ting
who would've thought of constructing a TING at the back of their house?
my maniac friend did and guess what?! what a TING to ting ting some beautiful wines.

served with chargrilled BBQ lamb marinated with bordeaux red (that's what they are for haha), crispy baked potatoes and fresh salad topped with a secret garlic dressing.

CC: "sitting gloriously golden yellow in the glass, the aroma of freshly picked citrus fruit and seashore minerals, pleasing acidty to welcome you, so elegant the acid softens your gum with good weight, excellent depth and lingering finish, and it's just the beginning to the night.. "

CC: "is that an avocado on the bottle? ohhh black truffles, which basically sums up this wine! it is as good as the [diamond of the kitchen], amazing energy from the pour, high-tone perfume of sweet red cherry raspberry, and there's no difference on the palete, if not better in many levels! properly structured, juicy, subtle power of a gevrey, soft touches of a chambolle, texture of silk, another wine optimsed to its full potential, perfect combination of excellent 09 grapes + human effort! supreme!!"

the consistency he gets in his wines, whether the vintage is good or bad, the wines always come out to be amongst the top, never fails to deliver the divine sensation of a holy drop!

E-Boys Miranda run

memories are great, if you have them..
like me I have pretty much zero short term memory.
the funny thing is though, my long term memory is somewhat amazing..

thinking back in uni days, our infamous fish n chip drive out to Miranda on an easy friday afternoon!!
so to refresh our memories.. the E-boys did it again only on a saturday and not a friday..
weather was amazing, food was great and the drive was a killer run!
so to celebrate making home in one piece..

CC: "firstly you look at the top, capped by a bottle cap! COME ON a bottle cap to cap a bottle of bubbles? I thought that was a joke, ugly as hell! and then it all went downhill... fine bubbles at the start, lime, citrusy, refreshing for a moment and next minute, bubbles stopped rising... tasted flat and far from any joy i would normally get with a bubble... ohhh and there was a hint of bitterness.. geeez"

CC: "it started well from the initial pour, lovely elegant nose of a Chambolle.. then i waited... and tasted... something is strange about this wine.. overpowering acidity and shy fruit, and not the balanced a long for.. seems like this wine has lost its soul a few years ago..."
